A sugar distillery plant is a facility that processes sugarcane, sugar beets, or other sugar-rich crops to produce alcoholic beverages like rum, or to extract ethanol for industrial or fuel purposes. The process begins with the extraction of juice or molasses from the raw sugar crops. This juice is then fermented by yeast, which converts the sugars into alcohol and carbon dioxide.
After fermentation, the resulting liquid, known as "wash," undergoes distillation. In distillation, heat is applied to separate the alcohol from water and other impurities, concentrating the ethanol. The alcohol is then typically aged in barrels, if producing beverages like rum, or further purified to create fuel-grade ethanol.
The plant often includes additional processes like filtration, evaporation, and dehydration to refine the product and remove any remaining impurities. Co-products such as bagasse (the fibrous residue from sugarcane) can be used for energy production or as animal feed.
